Gluten Free Peppermint Slice

Thinking about it, I don’t think I have ever had a peppermint slice so this was a first for me. I didn’t realize how easy it would be to put together. This version doesn’t use an oven (unless you want to bake your own cookies) but it does heat up ingredients on a stove. The result is a crispy base, smooth minty cream and chocolate topping.

For the base you just blend up some chocolate cookies. You can use store bought or if you are a newsletter subscriber you can head over to my Dark Chocolate Cookie Recipe. I used those cookies to make my base but you can use store bought. I make my cookies in batches and freeze them because they are perfect for making chocolate soil or crusts.

 

Gluten Free Peppermint Slice

The peppermint filling is just as easy. You can add as little or as much food colouring as you’d like. I love the bright green colour. However you can leave the food colouring out for a more natural look or a dessert that won’t turn your tongue green.

This is a great dessert to bring to a party; just cut it into bite size pieces and share the love. Make sure you set them properly for a few hours in the fridge otherwise they might melt when handled. The recipe below makes one tray of peppermint slice in a 20cm square pan. I line my tray with plastic wrap so that I can easily pull it free from my silicone mould.

Gluten Free Peppermint Slice

This gluten free peppermint slice is the perfect treat to share with family or friends. Make up a tray and then cut them into bite size pieces for an entertainers dessert.

Ingredients

Chocolate Base

  • 2 Cup Crushed Cookies**
  • 5 Tbsp Butter Melted

Peppermint Slice

  • 4 Cups Icing Mixture
  • 120 Grams Copha
  • 1/2 Cup Thickened Cream
  • 1 Tsp Peppermint Essence
  • 4 drops Green Food Colouring Optional

Chocolate Ganache Topping

  • 200 Grams Dark Chocolate Melted
  • 1/2 Cup Thickened Cream

Instructions

  • Line or grease your mould.
  • If you haven't already crushed your cookies then blitz them up in a food processor.
  • Mix them with your melted butter and once a soft sticky mixture is created, press it into your mould to create a base.
  • Let this rest in the fridge for 30 minutes.
  • While the base is setting heat up your copha in a pot. Once it is completely melted remove the pot from the heat and whisk in your icing sugar.
  • Once the icing sugar is completely dissolved add in your cream and whisk until mixed through.
  • Finally add in your peppermint oil and food colouring if you're using it and mixed that through as well.
  • Allow the peppermint mixture to cool to room temperature.
  • Once the mixture has cooled pour it over the biscuit base and spread it out with a palette knife.
  • Let the mixture set in the fridge for a couple of hours.
  • The final step is the chocolate topping. Heat up your chocolate until it's melted. Add in your cream and stir through and let it cool.
  • You can't add your chocolate until the peppermint cream is set so ensure that it is touch set before adding the cooled chocolate. If the peppermint cream is not set allow it to set in the fridge until ready.
  • Pour the chocolate onto the top of your mix and level it out with a palette knife and allow to set for 30 minutes.
  • If you have lined your tray with plastic wrap, gently pull up on this to remove it from the mould. Cut into bite sized squares for serving. Enjoy!

Notes

*You can use my recipe or store bought gluten free chocolate cookies.
