Gluten Free Faux Fried Rice

Fried Rice is one of those classic dishes that you could eat almost anytime. Unfortunately it can often be unsafe for a Coeliac to order tuck shop fried rice. This is due to not only the cooking process but the additives as well. More often than not fried rice contains soy sauce which we all know contains gluten unless specified Gluten Free. Other sauces that could be unsafe and added are; fish sauce, Worcestershire or sweet chilli. Never fear though this Faux Friend Rice should satisfy all those cravings.

Gluten Free Faux Fried Rice

The reason this is called a Faux fried rice is because I rice cooker mine. Of course you could always toss it in a wok to add that fried texture. The chinese fried rice flavour comes from the ingredients I add. To the water I add some sesame oil and soy sauce. I like to add in some simply wize dehydrated BBQ corn as well. These add a splash of BBQ flavour and obviously corn kernels are a big part of a fried rice dish. About half way through the cooking process -20 mins or so- you can add diced bacon, peas, baby corn and of course baby shrimp.

Once the rice cooker is done you’ve got yourself some impostor Chinese take away fried rice. Other varieties could include adding in chilli flakes or sweet chilli sauce. You may prefer some mushroom and diced carrot. Anyway you want to create your faux fried rice just use this guide. If something is hard or dehydrated you need to add it at the beginning of the rice cooker session. If you want to add any uncooked protein (other than seafood) just fry them up in a pan so that they are about half done for quicker cooking. If you are adding fresh ingredients like canned peas or carrots then add them at the half way point. This will stop them from over cooking.

If you’d like some potato in the mix boil it for 4 to 5 minutes in small dices. Again this will reduce the cooking time in the rice cooker and everything should come out perfect. The final step I like to add is some egg. I just scramble some egg in a fry pan and then mix it through at the end.

Gluten Free Faux Fried Rice

A home made fried rice with the taste of the tuck shop.

Ingredients

  • 1 Cup White Rice
  • 1 1/2 Cup Water
  • 2 Tbsp Sesame Oil
  • 2 Tbsp Gluten Free Soy Sauce
  • 1/2 Cup Simply Wize BBQ Corn Or other Corn
  • 1/4 Cup Peas
  • 1/2 Cup Diced Bacon
  • 1 Large Egg

Instructions

  • Add your rice, water, sesame oil, gluten free soy sauce and dehydrated ingredients to your rice cooker. If you don't have a rice cooker then you can make this in the microwave. Add everything to a large microwave safe bowl and cook it for 10 minutes, stir and then another 10 before the next step.
  • About mid-way through the cooking process. I like to do it about 20 minutes in because my Rice cooker goes for 40 minutes in total. Add in your fresh ingredients. This would be your bacon or if you're adding the baby shrimp those too. Fresh Peas and carrots or baby corn. Stir through.
  • If you are using the microwave then cook this for another 10 minutes only. At this point the water should have evaporated. If not, just microwave the bowl in smaller intervals until the water is gone and the rice is fluffy. If you are using the rice cooker then just wait until it turns off.
  • During this last few minutes I'll prepare my egg. I just crack it into a pan and whisk it up until it is in chunks. When these are cooked I stir them through the finished rice.
  • If you want that extra bit of 'fried' texture. Add some more sesame oil into a wok. Add in your rice mixture and toss it through over high heat. Serve with sweet chilli or soy sauce and enjoy.
