When Rebellion Brewing sent me a PR package containing some of their best sellers I wasn’t sure what to do with them. Of course, I took the chance to taste and review each variety. However, as a child diagnosed I never got into drinking beer, cooking it though is something I’d always wanted to try.
Of course, I have used O’Briens before in my beer batter recipe. However, I wanted to use beer in sweet recipes too. Beers carbonation adds lightness and buoyancy to cakes. Which is especially important when creating heavier cakes like chocolate. Adding in Cacao or Cocoa powder absorbs moisture from your cake batter, which means you need to compliment that with lightness.
One such cake that incorporates beer is a classic chocolate stout cake. Of course, traditionally those diagnosed with Coeliac Disease or gluten intolerance wouldn’t be able to eat a chocolate stout cake. Though, thanks to O’Brien Beer we are getting our chance. The malty, caramel aroma of their Brown Ale is the perfect addition to a chocolate cake. Which is exactly why I chose it for this Chocolate and Gluten Free Brown Ale Cake.
The final product was a really moist and rich cake with toasty undernotes. The low and slow cook, allows a slight crust to form on the outside of the cake which adds a brownie-like consistency. I remember smelling it and thinking about how it would be the perfect cake for a male birthday or just for someone who really enjoys beer. While the alcohol has been cooked out, you definitely taste the malted grains which as predicted compliment the bitter cacao flavour.
Overall it is extremely moreish. To keep the moist centre I use sour cream instead of milk which has a higher fat content. I haven’t tried this with a vegan sour cream so I am not sure if it would work. However, as long as there is some fat content it should be fine.
